WHere is a simplified version of a drink featured on the seasonal drinks list. This is a large-volume pre-mixed that is bursting with the essence associated with festive period, making it excellent for your festive gathering. Reserve the remaining cordial you can use for brunch beverages, puddings, or to mix another batch of this cocktail.
Bikini
Serves 10 people
To make the Clementine Cordial (yields 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (produces 850ml, to serve 10)
400ml premium vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml clementine syrup (as made above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Directions
Making the Citrus Syrup: Place all the components inside a saucepan, bring to a gentle boil, agitating so the sugar melts. Next, take off the heat and leave to reach room temperature entirely. Transfer to a sterilised bottle, seal and refrigerate it chilled, it will last for about a month.
For the Premix: Pour the specified liquid ingredients into a sizeable container, allow it to infuse for an hour, then strain , ideally through a fine cloth, making it fully clarified.
For serving: Measure 85ml of the batch mix to a mixing glass packed with ice, and stir carefully for one minute to cool it down. Filter to a chilled martini glass or similar, garnish with the cranberries and complete it using a light spray with the mandarin essence over the drink.
